Delicious St. Patrick’s Day Treat: Leprechaun Bark DIY Recipe
A lot like that ‘Christmas crack’ or even ‘ghetto toffee’, these are just as irresistible but definitely a step above in terms of ingredients! That being said, they’re a simple recipe that you can DIY in your own kitchen no problem at all. With a few basic baking ingredients you can make a stunning St. Patty’s Day dessert hardly anyone will be able to turn down.
Melted Chocolatey Goodness in Every Bite
Milk chocolate chips, caramel nibs, mint chocolate candies and even some mint sandwich cookies make this recipe pop! The top of this chocolate bark resembles a mix of white chocolate and green mint that imitates a streak of emerald green that looks super festive in your spread and leaves your guests speechless, (but certainly asking for seconds!)
Perfect for any Occasion
What’s cool about this DIY recipe is that it’s incredibly versatile! You can swap out the minty ingredients for other flavors including candied fruit or even nuts. The pretzels will still be there to provide an incredible crunchy texture while the melted chocolate takes care of the rest.
How Long Does it Take to Prepare?
This St. Patrick’s Day goodie only takes about an hour and a half until it’s ready to enjoy. That is, after you’ve got all of your ingredients together. The chocolate bark has to sit in the fridge for around an hour after it’s all combined in order to take a hardened form that can be cut up, served and enjoyed!

Ingredients:
- 1 ½ cup milk chocolate chips
- ½ cup caramel nibs
- 6 mint sandwich cookies, crushed
- 6 mint chocolate candies, broken into small pieces
- 1 cup pretzels, crushed
- 2 – 1oz blocks of white almond bark
- Green & yellow food coloring gel
- Gold chunky sprinkles
Directions:
Use the microwave to melt the chocolate chips in 30 second intervals, stirring each time
Spread the melted chocolate onto a parchment paper lined cookie sheet in a thin, even layer
Sprinkle on the crushed pretzels
Melt the caramel nibs and drizzle over the pretzels
Sprinkle on the crushed cookies and broken candy pieces
Melt each block of white almond bark in separate bowls
Add green food coloring gel to one bowl and stir until smooth – quickly drizzle over cookies & candy
Repeat the above process with the second bowl of almond bark and the yellow gel
Sprinkle with gold chunky sprinkles
Place cookie sheet in freezer until bark is set – about an hour
Remove from freezer and either break or cut into pieces and enjoy!
