Cake:

Cream cheese frosting:

100 Pack Pastry Bags Thickened 18 inch Disposable Decorating Icing Piping Bags with 4 Icing Bag Ties, for Cookie/Cake Decorating Supplies

Directions

Cake:

  • Preheat Oven to 350 degrees
  • Spray a whoopie baking pan with non-stick baking spray.
  • In a bowl with a stand mixer add the cake mix, jello, eggs, oil, rum, mint extract, and water.
  • Mix on medium speed until fully combined.
  • Pour the cake batter into the whoopie pan and fill only ¾ of the way full.
  • Bake for 10 minutes
  • Remove the whoopies from the pan and allow to cool to room temperature.

Frosting:

  • Combine all ingredients into a standing mixer, and beat until combined, smooth and holds a peak
  • Scoop the frosting into the piping bag and cut the tip off
  • Pair the whoopie pies to their size mates and pipe a thick dollop of the frosting onto the bottom whoopie pie
  • Place the top of the pie on top and press gently to form a sandwich

  • ¼ cup Blackberry Puree
  • 4 lg Eggs
  • 1 tsp mint extract
  • 2 tbsp Rum
  • ½ cup Oil
  • ¼ cup Water

Frosting

  • ¾ cup unsalted sweetened butter
  • ¾ Cream cheese
  • 1 tsp Vanilla extract
  • 1 tsp mint extract
  • 5 cups Powdered Sugar
  • 2 tbsp Heavy Cream
  • 1 large disposable piping bag

Instructions
