Candy Cane Baking Chips Alternatives

One of the main ingredients for these cookies are candy cane baking chips, which are only found around the holiday season and often once they are sold out they don’t seem to restock before the big day.

If you are unable to find these baking chips check out the candy/chocolate section in your local store and grab some Hershey kisses candy cane flavor. These are often a lot easier to track down and usually are on the shelves until after Christmas day.

For this recipe you will simply have to chop your kisses up into smaller pieces to make them work for the cookies. The taste is basically the same and it’ll save you the stress of going from store to store to track the baking chips down and an added bonus, whatever you don’t use I’m sure your family will enjoy eating!

Another alternative is actual candy canes, the classic kind not all those fancy flavors they have. Crush them up and roll your cookie balls with them. Now this will create a different taste and have a more crunchy taste to them, however it really does work well and you may even end up liking this version more!

Espresso Coffee Grounds

Another main ingredient is espresso coffee grounds! If you don’t want to purchase these or would rather use something else we have a few suggestions that will work in this recipe. One option is espresso powder, this can be purchased in MOST baking sections and is a lot easier to work with.

If you have espresso coffee beans you can grind them up and use them as well, just ensure you grind them into a fine powder before using them.Regular instant coffee can be substituted. It won’t have the same taste as the espresso coffee but it’s a great alternative and more often easier to find or have on hand.

Lastly, brewed coffee can be used. Yes you read that correctly! BREWED coffee. As long as it’s a dark roast coffee you can use it. Ensure you chill the coffee before adding it with your liquid ingredients.

Ingredients:

  • 1 cup Unsalted Butter, cold and sliced into small chunks
  • ¾ cup Sugar
  • ¾ cup Light Brown Sugar (packed)
  • 2 large Egg, room temp
  • 1 teaspoon Vanilla Extract
  • 3 teaspoons Chai Spice
  • 3 teaspoons of Espresso Coffee Grounds
  • 1 ½ cups All Purpose Flour
  • 1 ½ cup Cake Flour
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • ½ teaspoon cornstarch
  • ½ cup Candy Cane baking Chips

Instructions:

  1. In the bowl of a stand mixer fitted with a paddle attachment cream butter and sugars on medium speed for 2-3 minutes.
  2. Add eggs and vanilla and mix until combined.
  3. Scrape down the sides of the bowl as needed.
  4. In a large bowl add the flours, chai spice, espresso granules, baking soda, cornstarch, and salt.
  5. Whisk to combine.
  6. Add the dry ingredients to the butter mixture.
  7. Mix to combine.
  8. Use a large cookie scoop and scoop 4.5 oz dough balls.
  9. Roll the dough together to form a ball.
  10. Roll the dough balls into the candy cane baking chips.
  11. Place the balls on a parchment lined baking sheet.
  12. Bake for 12-14 minutes or until the dough ball is just barely set and no longer shiny.
  13. Remove from the oven and set to the side to let cookies cool.
