Alright, we know what you are thinking…do people really not know what a whoopie pie is? YES! It’s true some people are super familiar with them. A Whoopie pie is typically two soft cookies with a creamy filling inside. The most traditional Whoopie pies are chocolate and vanilla buttercream filling.
Whoopie pies can be described as a cookie but if we had to explain to someone the taste of them we would say they are like two mini chocolate cake pieces with delicious creamy buttercream filling. Now for these we are changing them up by adding some berry flavors. Check it out below.
Omit the Rum: Kid-Friendly Flavor Ideas for a Valentine’s Day Treat
If you have kids or those that don’t want Rum in their tasty Berry Whoopie pies just omit it! You will be left with a delicious berry treat that everyone can enjoy. Make a batch with rum and one without and let everyone enjoy them.
The rum flavors aren’t overpowering in this dessert so don’t be scared off by thinking it’ll be too booze forward. Other options for our tasty treats are using blueberry puree instead of blackberries. Since some don’t necessarily like the taste of blackberries (Crazy I know). Blueberries work very well with these. You can really try many different types of Berry puree with this recipe. Just think what works with berry jello and Rum.
To add even more color to your Whoopie pies you can add a few drops of food coloring to your frosting to make them even more colorful. We suggest a red or pink to make them even more fun for Valentine’s Day! However, you can use any color to fit any theme you are going for.
How to Make Berry Mojito Whoopie Pies
Yield: 14 whoopie pies
Prep Time: 10 min
Bake Time: 10min
Total Time: 20 min
Ingredients
Cake:
- 1 box Vanilla cake mix
- 1 3 oz box Berry Jello
- ¼ cup Blackberry Puree
- 4 lg Eggs
- 1 tsp mint extract
- 2 tbsp Rum
- ½ cup Oil
- ¼ cup Water
Cream cheese frosting:
- ¾ cup unsalted sweetened butter
- ¾ Cream cheese
- 1 tsp Vanilla extract
- 1 tsp mint extract
- 5 cups Powdered Sugar
- 2 tbsp Heavy Cream
- 1 large disposable piping bag
Directions
Cake:
- Preheat Oven to 350 degrees
- Spray a whoopie baking pan with non-stick baking spray.
- In a bowl with a stand mixer add the cake mix, jello, eggs, oil, rum, mint extract, and water.
- Mix on medium speed until fully combined.
- Pour the cake batter into the whoopie pan and fill only ¾ of the way full.
- Bake for 10 minutes
- Remove the whoopies from the pan and allow to cool to room temperature.
Frosting:
- Combine all ingredients into a standing mixer, and beat until combined, smooth and holds a peak
- Scoop the frosting into the piping bag and cut the tip off
- Pair the whoopie pies to their size mates and pipe a thick dollop of the frosting onto the bottom whoopie pie
- Place the top of the pie on top and press gently to form a sandwich
