Buttery, soft, and covered in delicious almond icing, can a cookie get any better? These Easter Italian cookies will leave your mouth watering and have you reaching for more. Not only are they that good, but they are very easy to make and can be made right before your Easter get together or ahead of time.
Top them off with delicious almond icing and some fun colorful Easter themed sprinkles and you have yourself the perfect Easter treat. Kids and adults will love these.
Decorating Ideas
If you are thinking of adding some more color to your Easter Italian cookies you can consider grabbing some food coloring and adding a splash of desired color to your icing!
You can also separate some of your icing into smaller bowls and mix up a few different colors – think easter colors! Ice your cookies in various colors or have your kids help you! Not only is this an excellent afternoon activity to do with them but it’s really fun and encourages them to be creative!

Can You Freeze These Italian Easter Cookies?
These cookies freeze very well! You can make these whenever you have time, or make a large batch and freeze some for the future. Just ensure you don’t ice them, that must be done fresh. Allow them to thaw fully before icing. You can even warm them up a bit before icing them so they seem like you just made them.
Trust us they will never know and this will save you time.
How to Make These Italian Easter Cookies
Ingredients
Cookies:
- ½ Cup unsalted sweet cream butter, softened
- 1/2 Cup sugar
- 3 large eggs
- 2 tsp almond extract
- 2 and 1/2 Cups flour
- 1 tbsp baking powder
- 3 to 4 tbsp milk
Icing:
- 2 Cups powdered sugar
- 3 tbsp milk
- 1 tsp almond extract
- 1 container of easter sprinkles
Directions
Cookies:
1. Preheat oven to 350 and line two cookie sheets with parchment paper.
2. Using a large bowl, beat the butter and sugar, almond extract until light and fluffy
3. Beat in the eggs
4. Using a medium bowl, whisk the flour and baking powder together.
5. Gradually beat in the dry ingredients.
6. Beat in the milk until combined
7. Using a mini ice cream scooper, scoop out some dough and place onto the cookie sheet.
8. Bake cookies for 9 to 11 minutes.
Almond Icing:
9. Using a large bowl, whisk together all ingredients except the sprinkles.
10. Spoon about 1 tbsp of icing onto the top of the cookies and let it drip down.
11. Sprinkle some Easter sprinkles on top.
12. Allow the icing to harden before enjoying!
