Romantic Chocolate Valentine’s Day Sandwich Cookies

Impress that special someone in your life with these amazing Chocolate Valentine’s Day Sandwich cookies made from scratch and more importantly, LOVE! If you want to add a little extra romantic flare to it consider adding some pink or red food coloring to your frosting! You can omit the sprinkles if you prefer or use any kind you wish. These cookies can be made ANY time of year as well! Just switch up your sprinkles on the outside with other seasonal ones OR just use regular ones!

Chocolate Valentine’s Day Sandwich Cookies Recipe

Ingredients Required

Cookies:

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened baking cocoa
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup light brown sugar
  • ½ cup sugar
  • ½ cup unsalted butter (melted)
  • 1 tsp pure vanilla extract
  • 1 egg (room temp)
  • 2 Tbsp water

Frosting Filling:

  • ½ cups unsalted butter (soft)
  • 4 cups confectioners sugar
  • 3 tbsp heavy whipping cream
  • 2 tsp pure vanilla extract
  • 1 large piping bag with large round tip
  • 2 cups Yomallow Baking Cupid Mix – Walmart/Sams Club

Directions:

  1. Preheat oven to 375 degrees.
  2. Prep baking sheet with a silicone mat.
  3. Add the flour, cocoa, baking soda, and salt in a large bowl.
  4. Whisk to combine.
  5. Add brown, graduated sugar, and butter in another bowl.
  6. Use an electric mixer to cream them together until light and fluffy.
  7. Add the egg, water, and vanilla with the butter mixture.
  8. Beat until well blended.
  9. Slowly begin to add some of the dry mixture, a little at a time, beat to combine.
  10. Repeat until all of the dry ingredients have been blended with the wet ingredients.
  11. Use a teaspoon to measure out the cookie dough.
  12. Scoop out the batter into a round ball.
  13. Before putting it on the prepared cookie sheet, flatten each dough ball with your fingers.
  14. Bake at 375 degrees for 5-7 minutes or until they are set. Do not over bake.
  15. When fully baked, remove from the oven and allow to cool on a rack.

Frosting Filling Directions:

  1. Add softened butter to a mixing bowl.
  2. Beat with an electric mixer until smooth and creamy.
  3. Add in 1 cup of confectioners sugar, a little bit at a time.
  4. Beat after each addition.
  5. Beat in the heavy whipping cream and vanilla extract
  6. Beat to blend.
  7. Slowly add the remaining confectioners sugar.
  8. Continue to beat until the frosting holds a peak
  9. Pair up equal size and shape cookies.
  10. Scoop the frosting into the piping bag
  11. Pipe a large dollop of frosting onto the center cookie
  12. Create a sandwich with the top cookie, make sure frosting comes out slightly once you create a sandwich
  13. Pour the cupid mix into a wide bowl and roll the edges of the cookie into the mix
  14. Repeat the process on the remaining cookies.
  15. Enjoy!
