Can you Make Guacamole Dip Ahead of Time?
With a little help from a lemon, of course you can! Since our recipe includes lemon in the base guacamole itself, you’re off to a great start already. Citrus juice helps to preserve the macerated avocado, and prevent it from browning in the fridge. Be sure to incorporate the lemon into the avocado immediately after it’s in the bowl. Snacks and dishes for entertaining are best made ahead of time, so you can take care of the rest of the preparations. The real secret is, you can enjoy this dip any time of year!
Ingredients:
- 4 avocados
- 15-20 cherry tomatoes diced (depending on size)
- 3 tablespoons of guacamole spice mix (we used Epicure Guacamole Dip Mix)
- 2 green stuffed olives
- 2 black kalamata olives
- Juice of half a lemon
- Serving platter
Instructions:
- Cut all avocados in half and remove pits. Then take a spoon and slide it gently between the skin of the avocado to separate it from the flesh.
- Once all avocado pieces have been properly skinned, mash them with a fork or blend in a food processor. -Add your guacamole spice along with the juice of half a lemon to your avocado mash and combine well.
- Place your guacamole mixture in the centre of your plate and shape into a grinch face. Think of the lower half as a heart, with a rounded hat on top, when you are shaping his face.
- Cut Kalamata olives in thin strips lengthwise and add the slices to form the grinch’s mouth.
- Add two green olives for eyes making sure the red peppers are visible.
- Complete the Grinch’s facial features by adding two slices of the black olives for eyebrows and a triangle diced tomato for his nose.
- Place a pile of round tortilla chips at the top of Grinch’s head followed by your diced cherry tomatoes in the shape of santa’s hat. Don’t forget to put one chip to mimic a pompom at the end of the hat.
- Serve your Grinch guacamole with veggies and crackers.
NOTE:
- It’s important to use a guacamole spice as to not change the color of the guacamole mix. If you add tomatoes and onions to your guac mix or even salsa as I’ve seen in some recipes, your Grinch will change colors.
- If you can’t find a package of guacamole spice mix, try making your own with a mix of sea salt, ground pepper, garlic powder, dried red bell pepper, chilli flakes, onion powder, ground cumin and paprika.
